the stand-by frozen foods dumpster. this is a picture of what we did NOT take home with us. all of these cardboard boxes are full of frozen meats, strawberries, pizzas and pre-packaged processed entrees. we filled our car in two runs, filled our freezer, my parents' storage freezer, and supplied the local baptist food ministry with more frozen meat than the pastor could rightly deal with. he was greatly appreciative, all the same.<br />

why do we waste? what makes products, materials and commodities so easily discard-able? especially when it is commonly said that so many people are in desperation? <br />

i fear for the wellbeing of a society so unwilling to be resourceful. i fear that we are stuck in a negative cycle of consumerism, of 'sell-by' dates, of the excessive production of processed foods, and the overpowering voracity of the economy versus the human needs of the people whose paycheck it represents. <br />

•cover a thoroughly-picked chicken carcass with water, throw in an onion, kale stems, celery and a carrot.<br />
•simmer it until the bones are soft and crumbly (several hours.) <br />
•work the stock through a food mill, then sort the remaining solids with your fingers, feeling out and removing any bone bits that didn't get soft enough. <br />
•place the solids, plus some of the drained liquid, into the food processor and whiz it up. <br />
•add the resulting paste back into the liquid and stir it in. <br />
•the stock is a dense, salty, creamy gravy. i imagine that it must be dangerously nutritious.<br />

"with lumps." so here is my attempt to explain myself: i understand the need for disaster-proof foods and they certainly have their place, but when food that is marketed for household consumption is hyper-processed and then styled to 'imitate' homemade rustic comfort food, it bothers me. potatoes and butter are affordable and nourishing foods, easily prepared. these 'country style potato pearls' contain numerous additives, preservatives and artificial salts and fats. i am not above eating this processed, pre-packaged convenience shit if it is all that is available, i just find its abundance unnecessary.<br />
